Ken's Carrot Cake

I had a request from my husband for carrot cake. So, I thought yeah....I want to try something a little different. When I mentioned to him that I was going to try a new recipe...ahhh...well...it isn't pretty to see a grown man cry. He wanted carrot cake. My carrot cake. Actually not my carrot cake. This recipe was from a friend at work that always brought it in when we had pot lucks at work. Huge hit. Here it is.

Carrot cake ingredients

Ken's Carrot Cake
2 cups sugar
2 cups cake flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 cup oil
3 cups grated carrots
4 eggs
1 teaspoon salt

Preheat oven to 350. Beat eggs and sugar until fluffy. Add remaining ingredients and beat a minute or two. Bake in 3 9" round cake pans; cover bottom of pans with wax paper. for 30 minutes or until done. Let cool in pans on racks for 5 minutes, then remove from pan and completely cool before frosting.

Cream Cheese Frosting*
1 8 ounce cream cheese, softened
1 stick butter, softened
1 box powdered sugar
1 teaspoon vanilla
Beat all ingredients until light and fluffy.

*I make 1 1/2 times this recipe, or even double it, in order to frost a three layer cake easily.

This cake is every bit as good as it looks! Be ready for a sugar high!!

The rest of the meal was special too. It featured grilled portabella sandwiches and included corn on the cob, fresh purple hull peas, cornbread and fresh tomatoes. Of course, iced sweet tea was served. Is that a summer meal or what?

    @Roxanne, Hi!! I hope they were buttermilk pancakes, lol. The move is over...I'm slowly creeping back into life again. Mostly unpacked, getting use to the new job. ugh. The house sale fell through after we were already in Florida. That brought me to my knees. Now we are facing 2 mortgages until the house sells. A strain on our budget to say the least, but I'm adjusting to that too. Surprising how resilient we are when the chips are down.

    I have looked at your blog off and on...looking up things. Template info I think. So nice to hear from you.
